Dessert Guacamole and Grown-Up Snow Cones at Rosa Mexicano

Rosa Mexicano's Ice Cream Festival kicks off on July 31 with unique frozen treats.

Rosa Mexicano will debut several new desserts on July 31 to celebrate its annual Ice Cream Festival.

Desserts include postre de guacamole, "paleta" popsicles, Mexican snow cones and ice cream treats capturing the flavors of Mexico.

Postre de guacamole is chips and dip, ice cream style. Waiters prepare the dessert tableside by folding raspberries, white chocolate shavings, coconut crunch and fresh mint into avocado ice cream. The guacamole is served in a whimsical molcajete—a Mexican mortar and pestle.

And the chips? They’re cinnamon sugar pastry crisps, called buñuelos, that can be dipped in a chocolate sauce before diving into the guac. This dessert is just as vibrant and fresh as Rosa Mexicano’s traditional guacamole, which is prepared with chunks of fresh avocado.

The restaurant’s Mexican popsicles, called paletas, are more than just frozen juice on a stick. The popsicles—made from fruits like guava, papaya and peach—are served upside-down in simple glasses. The rims are dipped in white chocolate and coated with rainbow sprinkles.

Strawberry milk crumble, coconut milk crumble or cinnamon crumble fill the bottom of the glass. Dipping the popsicle in the crumble adds a pleasant crunch to the dessert.

Order a raspado cart at the end of a meal and discover a grown-up version of the classic snow cone. Shaved ice is a popular street food in Mexico and Rosa Mexicano dresses it up with sweet mandarin orange, mango with chile, and mocha caramel flavors. Add chocolate shavings or spike your treat with tequila or bourbon.

Ice cream flavors featured this year include sweet cream with earthy, spiced Mexican chocolate; sweet honey-amaranth with a light, brittle crunch; plantain and peanut butter; and a cool sorbet with the hot taste of sour gherkin and jalapenos. The desserts are served with a soft pastry cone.

Antonio Condreros, one of Rosa Mexicano’s chefs, said that the restaurant’s goal was to create desserts with authentic Mexican flavors.

“They’ve got to be Mexican,” Condreros said. “They’ve got to have the flavors we’re looking for.”

Rather have a drink for dessert? Try a summer mojito with El Jimador silver, blood orange sorbet, agave nectar, fresh blueberries, mint and lime. Can’t get enough paleta? Taste a robust tomato and red pepper popsicle drowned in Modelo Especial.
