Sausage and Sandwich Shop to Fill Griffin Market Space

Jamie Stachowski, locally famous for his sausage and meat products, will open a butcher shop in Georgetown.

Stachowski Brand Charcuterie has become a crowd favorite at the Rose Park Farmer's Market on Wednesdays and will soon find a home inside at owner Jamie Stachowski's new butcher shop in the former Griffin Market space at 1425 28th St. On his website, Stachowski touts his products as "the only full line all-natural charcuterie business in the Mid- Atlantic region." According to George Petros, an agent at Papadopoulos Properties, Stachowski will offer the sausages people have come to love from his time at the market, but also sandwiches, charcuterie and more. "He's doing a really neat meat market," in the space left empty since the beloved Griffin Market departed in February, according to Petros. The 10-year lease will officially begin Oct. 1…
